SUMMER FRUIT!!

I get really excited at this time of year as a lot of the local goodies are starting to show in stores. Straberries, rhubarb, all kinds of delightful fruits start to appear. This recipes works best with stone fruit, but like I always, say…play! Also, yum!

                                                          BURNT STONE FRUIT with CHEESE

I saw this in Bon Appetit magazine, played with it a bit, and love it! This is lovely as a dessert or even an appetizer – you decide. To serve four, you’ll need:

2 Tb. unsalted butter

1 Tb. canna butter (you can use plain no problem)

6 plums, peaches, nectarines, etc., halved and pitted

8 oz. goat cheese mixed with

2 tsp. glycerin-based cannabis tincture, approx. 30 mg. total (ok to leave out)

Sea salt, pepper, olive oil

Melt the butters in a cast iron or regular skillet till foam subsides and add the fruit, cut side down. Let it cook for at least 5 minutes, making sure the cut sides get charred. Place the hot fruit on a big plate and let cool a little, then crumble the cheese mixture over. Sprinkle with salt, pepper, and a little olive oil and be amazed at how good burnt fruit can be. This also works on the grill, and is easy to take camping. Yum!
