EZ Cookies for May!

May!! Don’t you just love May? Flowers and sun and green everywhere….yum. So you can get out and enjoy spring, I’m offering these remarkable cookies. So fun and easy, the grandkids love to make ’em. Please don’t skip the salt; they’re too sweet otherwise. Have fun!

                           Gluten Free Pnut Butter Cookies

I saw this in the Seattle Times and I went ‘no way’. Then I tried them, and WOW! For approx. 1 dozen cookies, you’ll need:

1 C. good peanut butter (I like crunchy, but whatever you choose, get the natural kind with no sugar)

1 C. brown sugar

1 egg

½ C. chocolate chips ( I also add ½ C. salted peanuts, up to you)

1 tsp. baking soda

1 tsp sea salt

Preheat your oven to 350. Mix all of these ingredients together till you have a well incorporated mass. Drop from a teaspoon or small scoop for small cookies, or an ice cream scoop for big ones (you’ll get about 6 or 7) on to a lined baking sheet. Bake for 10 minutes and viola. Do let these cool completely as they are fragile when warm. YUM, and gluten free!
