SEXY LOVEBIRDS SPECIAL PASTA
This is one of those wonderful easy recipes we came up with at a Pantry Raid cooking class. It’s
not a ‘real’ Italian sauce, but boy, on a weeknight when you’re starving you’ll thank Steven and
Tasha for coming up with this! To serve 6, you’ll need:
I large onion, finely diced
Olive oil
2 -3 cloves garlic, minced
1 lb. good ground beef, preferably 80/20 lean to fat
2-3 Tb. good tomato paste (we love the one in a tube)
½ C. prepared pesto
Large pinch red pepper flakes, salt and pepper
1 C. good dry red wine – the stuff you’re probably drinking as you make this
½ C. pasta water
1 lb. cooked pasta – bow ties or wide noodles are good
Freshly grated parmesan
Sauté the onion in about 2 Tb. of the oil till it’s nice and soft – don’t let it brown. When it looks
translucent, add your minced garlic and stir for about a minute. Then add the beef, stirring till
most of the pink is gone. At this point you can get rid of some of the fat, then add your tomato
paste, pesto, adjust the seasoning, and stir some more. When it’s all incorporated, add the
wine, let it simmer for a few minutes to cook off the alcohol, then add your pasta water. You
should have a lovely thick sauce that you can pour your noodles into; serve with a ton of that
freshly grated parm and feel the love!!
