Yes, I have gigantic news. You are now reading the blog from Mary’s Cooking School! I realized a few weeks ago that I really want to teach more than (wonderful, effective, the best medicine) cannabis classes. When I was working with CozyMeal I was astonished that so many intelligent accomplished humans have no idea how to cook. Often people see cooking as a chore, or something complicated and difficult. I hope to show you not only are those things invalid, cooking can be a creative outlet, a sign of love, and keep you healthy and save you dollars. I’ll be teaching Essential knife Skills, 5 Ingredients or Less, Excellent Eggs, Cooking for Kids, and Kitchen Survival. If you want to be able to open the cupboard and have dinner on the table in 23 minutes, I got you. We need to be able to take care of our selves, and cooking your own food is the first step. Classes are on zoom and live, so chose your adventure. Here’s one of the recipes we’ll be using in Cookies for Kids:

Coconut Cloud Cookies

I found this recipe, from Kirbies Cravings, and with a couple tweaks, it’s awesome! For 1 doz. cookies, you’ll need:

1 C. +2 Tb. fine almond flour (packed when you measure)

½ C. white sugar, + 2 tsp. for rolling the cookies

1 egg

1/3 C. fine shredded coconut, lightly toasted

1 tsp. salt

Optional: orange or lemon zest, 1/8 C. finely chopped macadamia nuts

Preheat your oven to 350 and line a baking sheet with parchment. Combine the flour, sugar, salt, and zest if using in a big mixing bowl, then add the egg. Mix and stir till all the flour is incorporated, then stir in the shredded coconut. It’ll be thick, and do let it rest for about 5 minutes. Then take approx. a Tb. of the dough, roll it into a ball, then dip the top of the ball in the 2 tsp. of reserved sugar. Put the balls on the baking sheet sugar side up and press on the tops so they’re more cookie shaped. Bake these for about 13-15 minutes or till they’re golden on top. Let them cool all the way before you consume these delightful treats!    www.maryjwhite.com
