How Did This Happen??

Truly, how did this happen? How did I make it to 70 years of age?? Obviously one gets older when one doesn’t die, and so far I’m ok there. I think the biggest thing about aging though is that we don’t really expect to ‘age’; I know I’m quite young and frisky mentally, and even physially on a good day. So yeah, September is my bday month and I’m musing/thinking/processing the whole aging thing. I will say I’m extremely grateful for cannabis, as it does  seem to be keepng me healthy and happy and dancing. I know some of you don’t use cannabis medicine (yet) and that’s cool, but for those of us of a certain age it can be miraculous. Speaking of health, I’m sharing a fun recipe this month that’ll get you feeling fall. Healthy, easy, and only 5 ingredients – check out these buttery grains of goodness. Do enjoy this Beautiful Barley, and whether you use infused butter or not, embrace the coming change of the season!

                        BEAUTIFUL BARLEY ‘N SHROOMS

This is wonderful as a side or entrée, and is way more delicious that you’d think. To serve 4 as an entrée, you’ll need:

1 C. pearl barley

8 oz. Crimini or white mushrooms, sliced

1 medium white onion, fine dice

3-4 Tb. unsalted butter

2 C. beef, chicken, or vegetable stock

Salt and pepper to taste

Preheat your oven to 350. Melt the butter in an oven proof pan with a lid and sauté the onion till it’s translucent, then toss in the mushrooms and sauté till they give up liquid. Add the barley and cook till it starts to pick up color. Pour in the stock, bring to a boil,  turn down the heat to med. low, and cover. Bake this in the oven for around 45 minutes; check for doneness and cook a bit longer if the barley isn’t quite soft. Fluff with a fork, adjust the seasoning, and enjoy the chewy buttery goodness.
