Holiday Treats!!

 GREEN SPICY NUTS

These spicy nuts are irresistible and a great party starter, so if you make the infused version, pay attention! For approx. 2 cups, you’ll need:

2 C. unsalted mixed nuts, or nuts that you love

1 tsp. ground cumin

1 tsp. smoked paprika – or chili powder, cayenne, play with it

½ tsp. garlic powder

½ tsp. salt

1 Tb. olive oil or butter, infused if you want

Toast the nuts in a dry skillet till they show some color – about 5 minutes or so. Put them to the side in a serving bowl, then mix the spices and salt in a small bowl. Gently warm the oil in the skillet, add the spices, and stir to combine. If you’re using the infused oil, make sure you keep the heat low so you don’t burn off any cannabinoids. Take the pan off the heat, add the nuts and stir to combine, and serve. They’re spicy and nutty and fun! www.maryjwhite.com

                           TONI’S TRUFFLES

I adapted this recipe from a Brazilian confection from the ‘40’s to honor my great friend Toni Case. It’s simple and yum, and to make about two dozen candies, you’ll need:

1 14 oz. can sweetened condensed milk

½ C. unsweetened cocoa powder

3 Tb. solid coconut oil or Infused butter

1 Tb. cinnamon

1 tsp. salt

1 C. dried berries, chopped sour cherries, or raisins

Sprinkles or colored sugar

Prepare a teeny muffin tin and oil a 9 in. square baking dish. Get everything except the sprinkles in a saucepan and cook on low for about 20-25 minutes. You want this really thick – the spatula should leave an obvious trail when you drag it across the bottom. Spread this out in the prepared pan and chill for at least an hour. When chilled, scoop out about a Tb. of the mixture and roll in a little ball, then place in the small muffin cups. You can sprinkle the sprinkles over or roll the ball; if you do, consider damp hands. Also, if you use the 3 Tb. of coconut oil, you’re looking at around 150 mg, so be smart and keep these away from the kids!     www.maryjwhite.com
