Delicious Delights for December

Friends, here we are – almost next year! I am so grateful for you all; thank you SO much for reading my posts and making my recipes.                            GREEN CHOCOLATE ALMOND BALLS

This is super easy and remarkably delicious, and to make approx. 24 small balls of goodness you’ll need:

½ C. medicated butter, room temp OR plain unsalted butter (infused solid coconut oil works too, and makes the balls less melty, tho I find it blends best with some butter – try half butter half coconut oil)

½ C. confectioners sugar

¼ C. unsweetened cocoa powder

½ C. almond meal (you can use oats here it just won’t be as almond-y)

Large pinch salt

Dash almond and dash of vanilla extract

24 whole almonds (optional; sauté in cannabutter and salt before use – yum!)

unsweetened shredded coconut or colored sprinkles to cover

In a medium bowl gently mix all the ingredients (except the almonds and coconut/sprinkles) until the mixture is fairly smooth. With a teaspoon grab a small amount of the mix and rolling it between your palms, quickly make a ball. You do want to work fairly quickly as the butter gets soft fast. Tuck one of the whole almonds in there and smooth things over. Then place the balls in a big bowl with the coconut or sprinkles and roll ‘em around till they’re covered. Put in the fridge to firm up then …yum! Remember to always store your treats in the fridge and if medicated, def keep these away from the kids. SO GOOD.
