Back to School cookies (GF)

These aren’t infused, they’re the cookie that you and your kids can make, or they’re the cookie that you make when you want cookies but haven’t the time. These cookies are simple to make and absolutely delicious. There are 4 main ingredients, but think about adding nuts, citrus, etc. For a dozen cookies, you’ll need:


1 C. +2 Tb. blanched almond flour

½ C. white sugar, plus 2 Tb for the tops of the cookies

1 egg

1/3 C. toasted shredded coconut

Preheat the oven to 350 and line a baking sheet with parchment. In a big bowl whisk the almond flour and sugar to blend, then add the egg. This will be sticky and a bit dry, but keep mixing till all of the flour is incorporated. Stir in  coconut and any additions (¼ C. toasted chopped macadamias, lemon zest). Let this sit for 5 minutes or so, otherwise it can be too crumbly. Take about a Tb of dough, roll in a ball, then roll in the sugar. Get these on your baking sheet, flatten a bit, and bake for approx. 10 – 12 minutes. Let cool completely then devour!               www.maryjwhite.com
